There are 62 faculty members, 47 full-time teachers, 10 senior high teachers and 20 deputy high school staff, including 41 doctoral degrees and 13 master's degrees. 18 people have studied overseas for more than one year, and full-time teachers with overseas background account for 40%.

Food fermentation techniques, such as biological synthesis of polyamino acids (PGA, poly-lysine), organic acids and amino acid derivatives

Eminent Professors

Yonghong Hu, Dean of College of Food Science and Light Industry

Yonghong Hu, as a visiting scholar, went to the University of Georgia in the United States to conduct collaborative research. She has been engaged in biochemical engineering, industrial biotechnology, fermentation engineering, enzyme engineering and other research for a long time. She has made breakthroughs in basic research, technology development and promotion, and achieved fruitful results in innovative research. She has won more than 30 scientific and technological awards such as First prize of National Scientific and Technological Progress, First prize of Science and Technology Award of Jiangsu Province, Excellence Award of China Patent Award, etc.  She has integrated scientific and technological achievements into teaching and won more than 20 teaching awards such as National Teaching Achievement Award and Jiangsu Teaching Achievement Award. The main lecture "Bioseparation Engineering" course has won the awards for national bilingual teaching demonstration course, the national high-quality course, and the national high-quality teaching material.

 

Qi Zhang, Professor, Doctorate candidate Supervisor, Deputy Party Secretary, Director of Pharmacokinetic efficacy study and evaluation Center

Qi Zhang is mainly engaged in the research of pharmacology, pharmacodynamics and metabonomics of drugs and functional foods, especially in the pathological mechanism of cancer , osteoporosis, diabetic complications, reproductive system and other major diseases and the development of related new drugs and functional foods.

 

Hong Xu, Professor, Doctorate candidate Supervisor

Hong Xu has long been engaged in the innovation of biological manufacturing technologies such as agricultural chemicals and food additives in the fields of biochemical engineering, fermentation engineering and food science. She invented the new biosynthesis technology of biopolymer polyamino acids, and established a new industry of polyamino acids with international competitiveness, and she creatively applied polyglutamic acid to agriculture. The promotion and application of synergistic fertilizer is more than 100,000 km2 , and the income of farmers has increased by more than 8 billion yuan. She was invited to become the main drafter of the national industry standard, successfully developed new strains and technologies for the synthesis of biological preservative polylysine (polylysine), broke the long-term dependence on imports through engineering and technological innovation, and promoted it into the national food additive catalogue. She invented a series of biocatalysts screening, transformation, and industrial application of new technologies to achieve green manufacturing and substitution of novel functional sugars.

Xiaohui Xiong, Professor, Doctorate candidate Supervisor

Xiaohui Xiong is the chief expert of the National key Research and Development Project (National key Research and Development Project), the director of the National Light Industry Food quality Supervision and National Light Industry Food Quality Supervision and Testing Nanjing Station, the director of China Key Laboratory of Fast Inspection Technology and Equipment for Light Industry Food Safety, Jiangsu Food Safety Rapid Testing Public Technical Service Center, Center for Food Quality and Safety, Nanjing University of Technology. He is mainly engaged in teaching and scientific research in food microbiology and food safety. He undertakes a number of national and ministerial and provincial projects, is responsible for formulating a number of local and national standards, and has published more than 100 relevant academic papers. He is now the editorial committee of a series of teaching materials for food majors in colleges and universities, and an expert from the Professional Committee of Food Safety of Jiangsu Province. He is vice president of Jiangsu Light Industry Association and vice chairman of Jiangsu Food production Safety Association as well.
